I have a Yamaha DXplorer Midi drum kit and I want to map this in logic 8 so I can mix each and every instrument on the kit (snare, kick, etc) individually. All of our tutorials are ordered and categorized there. We don't have any tutorials on sending MIDI volume to an external mixer because that would be unique to your hardware. But it shouldn't be hard to do by sending the data to the correct port. Check the wiki. All of our tutorials are ordered and categorized there.
